- Jasmine rice: 2 cups
- Water: 3.5 cups
- Minced garlic: 4-5 cloves
- Roasted peanuts: quarter cup
- Ground ginger: half teaspoon
- Thai or Mexican chilies: 1 Thai chili/ 2-3 Mexican chiliesÂ
- Finely chopped onion: 1
- Lime juice of 1Â
- Freshly chopped cilantro: quarter cup
- Basil: sliced in thin ribbons (1/4)
- Freshly chopped spring onion: A little bit (optional for garnishing)
- Salt and pepper: to tasteÂ
Procedure
- Heat coconut oil in a deep pan on medium-high heat.
- Add onions to the oil and sauté for 5-6 minutes. The onions should be soft for further processing of the dish.Â
- Add salt and pepper as per your taste. Also add Thai or Mexican chili, ginger, and garlic and cook them until you get the desired fragrance. At this point, cooking for another one or two minutes should be enough.Â
- Add water and allow it to come to a soft boil.
- Add rice and reduce the heat.
- Keep the rice cooking in water till all the water is gone. It would require a simmer for 20-25 minutes so that rice also cooks well with flavors inside.Â
- Cover them while simmering.
- After the water is absorb, add lime juice to the rice.
