BROWNIE RECIPE

The following recipe would yield approximately two dozen brownies. NOT FOR THE FAINT-HEARTED ONES!!
Ingredients
- Eggs: 4 large
- Salt: 1 teaspoon
- Baking powder: 1 teaspoon
- Unsalted butter: 16 tablespoons
- Sugar: 2 ¼ cups
- Cocoa powder: 1 ¼ cups
- All-purpose flour: 1 ½ cups
- Chocolate chips: 2 cups
- Vanilla extract: 1 tablespoon
- Espresso powder 1 teaspoon (optional)
Procedure
- Take a 9×13 inches pan and grease it properly from all sides. Line it with parchment paper.
- Keep the oven preheated at 350°F.
- In a bowl, crack four eggs and add cocoa powder, salt, baking powder, vanilla, and if you like, espresso powder.
- Remember to beat all these ingredients at medium speed, if you are doing it manually or with a machine beater.
- Meanwhile, you are beating, melt the butter in a pan on medium-low heat to save time. Keep in mind not to burn the butter; be gentle with the flame.
- Add sugar and keep stirring it gradually. Keep adding the sugar till all of it dissolves in the butter.
- Do not overheat it; the butter must then have a shiny appearance. Avoid bubbling.
- Add this mixture to the egg mixture in the bowl while stirring it smoothly and continuously.
- Add chocolate chips into the combined mixture with flour.
- Once you are sure that the mixture is well-mixed, add it to the pre-greased pan.
- Set this pan into the preheated oven for 28 to 32 minutes.
When Are Brownies Done?
A very important factor that counts in making the best fudgy brownies is timing. When you would know that brownies are done? The center should look moist, the upper layer should be crusty. For this purpose, take a toothpick, and prick it inside the brownie.
If you see small moist crumbs on the toothpick, it means the brownie is ready from the inside and the outer layer would be dry on the toothpick. You can also test this with a knife. There would be no uncooked batter left that might stick to the toothpick or knife. It would be the primary indication that brownies are not done yet.
Last Steps
When you KNOW that the brownies are perfectly done, remove the pan from the oven.
Keep it aside for a while to let them cool down for a bit.
Cut into slices, neatly with a knife.
You can sprinkle caster sugar on top according to your preference.
