  • Corn tortillas: 4
  • Large eggs: 4 (beaten)
  • Cooking oil for frying: as per your requirement 
  • Red bell pepper: half and diced
  • Yellow onion: ¼ chopped 
  • Unsalted butter: 1 tablespoon
  • Salsa verde or hot sauce: half cup
  • Mexican cheese: half cup shredded 

Procedure of Migas Recipe

After you have noted down Migas ingredients, we move on to the simple Migas recipe. Why do we say “simple”? We will let you know down here.

  1. Heat cooking oil in a skillet or frying pan. Keep it on medium heat.
  2. You need to be careful about the heat as you do not want burnt tortillas on your Migas. 
  3. Fry tortillas one after the other until they are golden brown. This is the EXACT right color for keeping them crispy. Fry them from both sides. 
  4. After the tortillas are fried, cut them into pieces and keep them aside for later use.
  5. If you have leftover oil in the pan, it is great. Add butter now with onions and bell pepper that are diced and chopped.  
  6. Saute them to make them soft. Add the eggs that were kept beating in the beginning. Mix all the vegetables well to make smooth eggs.
  7. Do not mix the eggs too much. They need to be soft to add to the flavor of the entire recipe. 
  8. Now add tortillas that were fried in the beginning.
  9. Top the simple Migas recipe with Mexican cheese and hot sauce.
  10. Serve immediately after putting cheese on top as it will melt, which is the perfect APT time to devour!! 

Important note: To make it more appetizing and spicier, you can add jalapenos to the dish in the step where you add veggies. 

If you are a beginner and making a Migas recipe for the first time, keep in mind that Migas with flour tortillas are fried as well as the corn tortillas.
